Summer is coming to an end and outdoor grill-a-thons are slowly becoming a fading memory. Bid adieu to the heat with some BBQ- pulled chicken sliders, green beans, and some watermelon slices!

I’m not a pork fan so I used chicken- you can certainly substitute back for pork!

Hamburger buns now come in “slider” size- mini is just more funHere’s what you’ll need for the sliders:

1/2 cup ketchup
1 tbsp brown sugar
1 tbsp apple cider vinegar
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dry mustard
1/2 tsp paprika, I didn’t have any so I just used more chili powder and cumin
1/2 tsp ground cumin
1/8 tsp all spice
2 cups shredded chicken, rotisserie chicken works great here, I used 1/2 of a whole rotisserie chicken
8 slider buns
Pickels, if you like them!

Combine first 10 ingredients over medium heat. Bring to simmer and cook 3 minutes until slightly thick. Add in shredded chicken. Cook 2 minutes. That’s it! Scoop chicken onto warm buns. Delicious BBQ in less than 10 minutes!

This recipe is so easy it’s crazy. Grilled coconut shrimp can top off a Thai dish, add to your grillin’s during late summer grill-outs, or go atop a salad.

What you’ll need:

1 can unsweetened coconut milk
Garlic, minced
Cilantro, chopped
Lime Juice
2 lb Shrimp, heads on
Salt & Pepper
(Thai Bird Chilies, minced- if you like spicy!)

Combine everything but salt and pepper. Marinate for 30 minutes. Season to taste with salt and pepper. Grill shrimp 3 minutes each side or until cooked through. You can put them on skewers for the grill or just throw them into a skillet!
